So today was off to a rough start. I woke up on time and was ready to take on the day and then… my terrible toilet clogged and overflowed and I had to take care of that ordeal. I was especially stressed because I’m expecting AirBNB guests later today and wanted to leave everything all perfect for them (I have a 5 star cleanliness rating after all). Ughhhh life why must you happen? I hurried to make my breakfast and lunch for the day, as well as clean some dishes from the night before that I had left over out of laziness. Unfortunately I wasn’t able to wash my dishes from this morning, for which I apologized profusely to my guest and promised I would do them as soon as I returned home at 9pm. I was of course late to work, but luckily my coworker had gotten there early and set everything up. Phewwww.

For breakfast I made a strawberry banana smoothie. I used 1/2ish cup of frozen strawberries, one banana, 1/4 cup plain Greek yogurt, 1 cup of iced green tea that I had prepared the night before and refrigerated overnight, two dates, and a teaspoon of flax-seeds. Easy enough and not disgusting looking, as well as full of 10 grams of protein!

My mid-morning snack was apples and caramel, just like the other day. Nom.

For lunch I packed a chickpea salad sandwich. Yes, ANOTHER vegetarian sandwich without fake meat! Nestled between two slices of whole wheat bread was one half of a combination of a can of chickpeas, a whole avocado (full of the good kind of fat) and cilantro with just a dash of salt and pepper, along with some fresh baby spinach leaves. I also enjoyed seltzer water and carrots, all for a total of 21 grams of protein.

I got off work at 12:30 and headed straight to the gym to do a light work out of 15 minutes on the elliptical and 30 minutes on the bicycle for a total of 45 minutes. I only had until 2pm when my next class started, so I hurried to dry off my sweaty self (gross) and changed back into my regular clothes for class. Yes, I changed back because I do not like wearing my workout clothes outside of the gym. Yes, they are comfy, and yes, it’s convenient, but it’s also gross and smelly and in my opinion just shows that you don’t care what you look (or smell) like. I like to think I have some semblance of daily fashion style and like to keep it that way.

After receiving bad news about my paycheck -VCU made a mistake back in November and will be cutting my next paycheck by $383  😦 – and after my class ended at 3:15 I spent my 45 min break between class and work at Alchemy Café, a super-hipstery café on campus, sipping on a cappuccino while reading Don Quijote. I feel so European sitting there in front of the window and people watching; it takes me back to my happy place (Paris, duh) and relaxes me no matter what I have going on. Then I sadly rejoined the real world went to work at 4.

While at work I ate my meal of chili and corn muffins again for a total of 33 grams of protein, and snacked on almonds for another 6 grams of protein.

After a rough day I headed home at 9 to see my fiancé, who had put away the dry dishes and washed the dirty ones, fed my cat her wet food (which he absolutely cannot stand), and had MADE ME CHOCOLATE CHIP COOKIES WITH TWO GLASSES ALREADY SET OUR FOR MILK. Best. Fiancé. Ever. I had two cookies and a glass of milk while watching the season 4 finale of Lost before greeting my guests, showing them around a bit, and heading to bed.

Chickpea Salad Recipe


My Monday

First of all, I don’t do weird-ass vegetarian recipes. I ain’t got money or time or the taste-buds for that. Most of the food I make is pretty run-of the mill food that both vegheads and meat-eaters alike would enjoy. I want to show all curious souls what a regular -not a pinterest super-hippie homemaker grow-your-own-oats goddess- vegetarian eats.

I inherited a blender (more like one of my sorority sisters bought it in hopes of using it to be healthy and make smoothies and then realized it wasn’t happening and gave it to me) a few weeks ago and finally decided to do something with it other than just have it sitting on the unreachable top shelf of my teeny-tiny kitchen’s cupboard.  Last night I went to Kroger and bought healthy-people food and decided that this was the week I would make smoothies.

Pinterest helped me in this endeavor, and I found an infograph (ahhh how I love them) showing how to successfully make healthy smoothies.

For this smoothie I decided to include frozen mixed-berries, spinach, plain greek yogurt, milk, two dates for sweetness, and flax seeds. After not having the blender on the base correctly and spilling and entire cup of milk EVERYWHERE I finally had a Pinterest-worthy smoothie stacked up in the blender ready to smooth out. I wish I had gotten a picture, but it was 7am and we all forget things. I put it in a Tervis and took it along with me to work to sip at my desk.

Around 9:30 I started to feel a rumble in my tummy, as all I had had to eat was liquified produce, so I enjoyed a banana. Just a plain old banana. I’m sure everyone knows what they look like so I’ll skip the pic.

In my Don Quijote class around 11:15 I started to get the rumblies again, so I hide my baggie of almonds in my lap and ate them one-by-one as quietly as I could.

Then around noon came the good part. LUNCHHHH 😀 I had packed veggie-chili and corn muffins since the day before was the Super Bowl and no chili had been had then. The muffins were just the Jiffy vegetarian mix you buy for like 60 cents, so maybe not clean, and I made the chili by sauteing onions and garlic in the bottom of a soup pot and then dumping in a can of the good ole’ Campbells tomato soup, a can of kidney beans, a can of garbanzo beans and chili powder. I topped it off with cheddar cheese and just reheated it at work.

2:30 rolls around and I grab a small apple. Again, we know what apples look like.

One of my classes was cancelled so I was a good girl and went to the gym around 5:30 and ate some carrots along the way. Nothing fancy, just some elliptical for 30 min. Again, I’m 5’5″ and weigh around 135 pounds, so I am well in the healthy bmi-range and don’t need to lose weight. I work out and eat the way I do because I want to be healthy, not skin-and-bones skinny.

After the gym I went to my night class and I ate two hard-boiled eggs and tabbouleh salad! I know tabbouleh salad sounds weird and scary, but all it is is olive oil, lemon juice, cracked wheat (also called Bulgar- it’s a whole grain), tomatoes, cucumber, red onion, and parsley. You don’t even have to cook it… it’s that easy. Just mix the lemon juice and oil together and let the cracked wheat absorb all that goodness for about 30 minutes before adding the other 4 ingredients. PLUS the longer it all parties together in the bowl the better it tastes, which makes it great for meal prep. It’s Lebanese and amazing, but I forgot to take a picture so you get a stock image.

I also drank a glass of water with chia seeds in between consecutive interpretation exercises.

After my night class got out at 9:40 (ugh way too late) I treated myself to two dark-chocolate Ghiradeli squares and chamomile tea while watching Friends on Netflix.

So, as you can see, I finished out my day with 80 grams of protein when I only need to eat 49 grams! All without meat or weird vegetarian ingredients. It is possible, y’all.
